Tropical Traditions Coconut Cream Concentrate Giveaway!

I was thrilled when Tropical Traditions contacted me about doing another review and giveaway for them because I really love their products.  I picked the Coconut Cream Concentrate, since it just sounded delicious.  And it didn't disappoint.  When I opened the jar and took a whiff, it smelled just like coconut cream pie.  My husband immediately stirred some into his coffee, and he was smitten.  So smitten that he pleaded to take it to work so he could use it in his coffee there.  We may be diplomatically dividing the jar.
I'm not much for drinking coffee, but I do love a good coconut cream pie, so I decided to try to adapt a recipe I had.  I came up with one that's a keeper!

Coconut Cream Pie:
3 eggs
2 1/2 cups sugar
1/2 cup flour
1/4 cup melted butter
1/4 cup melted coconut cream concentrate
1 1/2 cups milk
2 tsp vanilla
2 cups flaked coconut
2 unbaked 9 inch deep dish pie shells

Beat eggs with mixer until lemon colored.  Stir in sugar and flour.  Blend in butter, coconut cream concentrate, milk and vanilla.  Add coconut last.  Pour into pie shells.  Bake at 325* for 55 minutes or done.  Yield: 2 pies.

Pierce said, "I could eat this pie EVERY DAY".  Cort said, "YUMMY!" and Reid said, "I want more pie!"  I made these pies around lunch time.  We ate an entire pie before the day was over.  It was that good.  Next year, for Thanksgiving?  I'm making this!

I use coconut cream for alot of our dishes. I grew up in the Indian Ocan coast and coconut is a main ingredient in our food.. use it in rice, vegetables, meat, bananas etc. Even making rice patties or cakes.. So I would really love to try this. I have been substituting coconut cream powder when I cook.
