Southwestern Chicken Pasta

Some nights I don't have much time to toss dinner together, and this is a recipe that comes together in less than 20 minutes.  It was a big hit with the boys.

Ingredients:
2 tbsp. butter
1 small onion, chopped
2 cloves garlic, chopped
3 cups egg noodles
1 15 oz. can black beans, rinsed and drained
8 oz. Mexican style Velveeta
1 14 oz. can diced tomatoes with jalapenos, drained
6 oz. grilled chicken breast strips

Saute onion and garlic in butter in a large skillet.  Meanwhile, cook egg noodles according to instructions and drain.  Once onion and garlic are softened, add Velveeta.  Cook on low heat until melted, stir in black beans, tomatoes, and chicken strips.  Heat through.  Add noodles and toss to coat.  Enjoy!

i don't really do recipes. my 'go to' is usually something made out of a rotisserie chicken that i bought at the store. :)

It looks wonderful!!! My go-to really fast recipes are SO boring! Grilled cheese fancied up, scrambled eggs, spanish rice, omelets with different fillings, rice dishes.

I usually make a grilled cheese and add tomato and jalapeño with some sort of soup! My husband loves anything southwestern. Bet he'd like this.

We never really need to rush, being retired!!! Hubby is intolerant to eggs, dairy, yeast. I've given up on many recipes, too!

Seems like something Livie would LOVE, because it has cheese, LOL.

Our quick go-to is usually homemade pizzas, which we ate last night. We usually use one of those pre-made pizza crusts (or occasionally the raw dough that comes in a "biscuit can" if we have a bit more time), get some sauce, cheese, and whatever toppings, and in just about 12 minutes (including prep and baking time) we've got dinner.
