Using What We Have

I love recipes where I can use the foods we harvest ourselves.  I found a recipe on Pinterest recently for lemon raspberry zucchini bread that was perfect with a few modifications for this purpose.

I switched out wineberries for the raspberries, as we had some in the freezer that we foraged from our land in July.

I switched out shredded rampicante squash for the zucchini, as I had a ton from the garden that needed to be used up.

I used eggs taken from the hens we raised from chicks.

Now if only I could figure out how to grow a lemon tree on the property.  Then I'd be all set!

As for the bread?  I could not stop eating it.  So good!

That bread looks DELICIOUS. I love how you were able to use all your own home-grown ingredients. Hmmm...can you grow a lemon tree in your house? Now my curiosity is getting the best of me...I'm going to do some research :)

It is beautiful!! You are very good at altering recipes. I have a blog friend in Georgia who grows lemon trees in her yard. But maybe it is warmer there. I bet you could do it!!

Wow - I wouldn't be able to leave it alone either. It looks very good, and I'm always amazed by you, Lisa.

We had a lemon tree, which was so finicky we gave it to a friend, who kept it in his garage in winter months and dragged it outside for the warmer seasons. He had many many lemons from that tree. Go figure.

Looks really good, nice to have the ingredients handy. I still have a few berries, but not for long

That looks mighty nice, and all the moreso since it's from your own land. That makes a big difference.

When I was a boy we had a lemon tree and a grapefruit tree in our yard, and my mom would go out and pick the fruit right off the tree for our meals. We tried to grow lemons up here in the mountains, but the severe winters killed the trees no matter what we tried.

Have you tried the dwarf lemon trees in a pot that ya bring in each Winter? Works for our fig tree :)

It looks amazingly tasty

Why do I think that if anyone can get a lemon tree to grow indoors, you'd be the one to succeed? I think you should at least try....

Those look delicious. When you find out the secret for the lemon tree let me know. We have had one for over two years now. We get buds but they fall off and haven't had any fruit yet!

I was going to tell you about the miniature lemon tree that you grow in a container but I see someone already mentioned it.
