Black Bean and Corn Salad

Even though temps have been in the 90s this week, I can feel it in the air that summer is drawing to a close. Typically by the second week of September, things really cool down here. In the meantime, now is the time for me to gorge myself on some of my favorite seasonal foods: tomatoes, peaches, and sweet corn.  I know I'll miss those items during the course of the winter.

So here is one of my absolute favorite summer salads. 
Black bean and Corn Salad.
So simple, yet bursting in color and flavor.
Just toss the ingredients together and enjoy.

Black Bean and Corn Salad:

Dressing:
1/3 cup fresh lime juice
½ cup olive oil
1 clove garlic
1 teaspoon salt
1/8 teaspoon cayenne pepper, or more

Salad:
2 (15 oz) cans black beans, rinsed and drained
1 ½ cup corn kernels
1 avocado, diced
1 red bell pepper, diced
2 tomatoes, chopped
3-6 green onions, chopped
½ cup cilantro, chopped

Oh my lord, I'm so excited for fall. And I want to see fall pictures of your farm! Count that as an official request, lady!

Subtract the Cayenne pepper and you had me at Black Bean. :P YUM!

This looks delish -- I'm going to try it, though my salads never (seriously) taste as good as what others make. Sigh.
