Asian Vegetable Soup on Muffin Tin Monday

It's Muffin Tin Monday, and we've been eating a lot of soup lately.
Garlic bread with a silly face, salad (Pierce doesn't like salad, but I keep presenting it as an option with different flavored dressings, in hopes that eventually I'll find one he likes) and my Asian vegetable soup.  So although Pierce likes a lot of veggies, he does not like salad!  Yet. As for the soup, I came up with this recipe a couple of winters ago and have been making it off and on since - it comes together quickly and we all really like the flavors.  If you want to try it out, you can find the recipe here.

Only one of my boys like salad. Discovered that when I had made a spinach salad for myself and he ate it all when I got up from the table to go get something else for the boys.

The soup looks good and I love the bowl! Have you ever tried a salad bar (either at a restuarant- we love Salad Works- or at home) with Pierce? My kids have had on again, off again, relationships with salads- However, if they make their own salad they are much more likely to eat it.

Very cute tins! My little boy will ask for salad, only to lick off the salad dressing ; ) Hoping we out grow that one soon!

That soup recipe looks really, really good! We like tofu, and I know we would love this soup!

Amy liked salad when she was little, and everyone thought it was odd. But her love of salads got us to eat more of them too:)

Clever Lisa. Our youngest is a picky eater, but will eat salads (even at McDonalds). Funny how each kiddo is different.

How healthy and yummy looking! My girls are not big salad fans either. I keep putting them out and them Mo asked for one yesterday. She did not eat it but she asked for it. That is a step in the right direction.

My daughter, Madelyn, never liked salad either, but I was persistent and kept offering it. Now at the age of 6, she often requests it for dinner. It took some time, but now she loves it!

Mmmmm...I love soup! I've never made one like that before, but it would be fun to try! I hope Pierce will eventually find a salad he likes. :)

i love soup for dinner with a big, and i mean big, chunck of bread!!

my little one eats salad. and my older one does not. i'd present it to the older one... but then what am i gonna do with it once she refuses? dude. i ain't eatin' salad.

Cute lunch Lisa! I'm sure he will eventually like salads. My son started wanting to taste my salad when we were eating out. I would give him the crunchier pieces of the romaine lettuce and he loved it with ranch dressing. He's not much on toppings though! lol Maybe put a cucumber on it and that will get him to try it more.
